Jody Herman, MS, RDN, CEDRD

Registered Dietitian Nutritionist Supervisor

Jody Herman is a Registered Dietitian Nutritionist with a background in eating disorders, substance use and mental health diagnoses as well as food allergies. Beginning her dietetics career in the mental health field, Jody has provided individual and group counseling with nutrition education for clients, as well as pre-professional adolescent dancers. She has worked with eating disorders and mental health treatment centers in the Greater Los Angeles area including Breathe Life Healing Centers and La Ventana. Formerly a Professional Dancer, Jody discovered her passion for nutrition to improve quality of life and performance longevity, leading her to dietetics. Continuing her journey, she graduated with her Masters of Science from Drexel University in Philadelphia and completed a Distance Dietetic Internship through Priority Nutrition Care in Southern California. With her passion for working closely with individuals to encourage self-efficacy and confidence in their relationship with the nutritive value of food and their bodies, Jody is excited to work with Bamboo Nutrition Therapy to support the philosophy and vision of the founder and company.



Laura Gajda, RDN

Lead Registered Dietitian Nutritionist

Outreach Coordinator

Laura Gajda is a Registered Dietitian and Nutritionist with a background in eating disorders and mental health diagnoses.  Laura was the Adolescent Dietitian at Rosewood Centers for Eating Disorders and specializes in educating and working with families of adolescents with eating disorders.  She also specializes in working with adults that have eating disorders and building sustainability in their own recovery. Laura graduated from Eastern Michigan University with a Bachelors of Science in Dietetics where she also completed her internship.  She looks forward to providing individualized care to each and every Client. She will work with the client to try to help each client build their own sense of autonomy around food and decrease the power that food can have over a clients life.  Laura looks forward to working at Bamboo Nutrition Therapy, Inc. and supports the foundation of this practice by helping those struggling with food and nutrition.

Rebecca Berg, MS, RDN

Registered Dietitian Nutritionist

Rebecca is a Registered Dietitian Nutritionist with a background in caring for diverse populations across a wide range of ages and nutrition-related conditions. Her true interest lies in caring for clients with eating disorders and disordered eating, and walking with them on their journey to food peace. A graduate of Northwestern University in Chicago, Rebecca found herself working in the field of non-profit marketing and event planning in New York City. She soon discovered that she was passionate about food justice, public health nutrition and teaching pediatric and adult populations about the role that nutrition plays in overall well-being. Continuing her journey, she returned to school and completed a Master’s of Science in Nutrition from the Hunter College School of Urban Public Health. After graduation, she moved to Los Angeles to complete the Veterans Affairs of Greater Los Angeles Dietetic Internship program. It was there that she discovered her true love for outpatient nutrition counseling and deepened her practice through a Health at Every Size lens. Rebecca is deeply curious about each clients lived experience and is honored to join Bamboo Nutrition Therapy. 


Amelia Painter, RDN


Registered Dietitian Nutritionist

Amelia has a background in worksite wellness, long-term care and eating disorders.  She was led to the nutrition field by her desire to serve in the community.  She has worked locally and internationally promoting healthful food practices and self care.  Amelia completed her bachelor's degree in Utah and then came to Southern California to complete a distance dietetic internship through Wellness Workdays with an emphasis in sports nutrition.  During her work and education experience she was drawn to the eating disorder field and found that she is passionate about helping individuals create an all-foods-fit mentality and promoting body positivity.  Amelia is excited to be part of the Bamboo Nutrition Therapy Team.


Vinita Vongviwat, MS, RDN

Registered Dietitian Nutritionist

Vinita Vongviwat is a Registered Dietitian Nutritionist (RDN) with a background in chronic disease management, prenatal nutrition, and mindfulness. She took a non-traditional path to a career in food and nutrition. While working as an Environmental Health and Justice Organizer, her growing interest in food justice issues inspired her to become an RDN. After completing both her Master's degree in Nutrition and Dietetic Internship at Columbia University in New York, she returned to Los Angeles to work in the same community that inspired her to pursue nutrition. Vinita has experience providing medical nutrition therapy, nutrition counseling, and education to adolescents and adults in an outpatient setting. Through this experience, she discovered her passion for guiding individuals on their journeys to make peace with food and to heal their bodies and minds. Vinita believes in achieving health at every size and uses an all-foods-fit approach to guide her practice. She is thrilled to join Bamboo Nutrition Therapy, and support the mission of providing accessible, affordable, and quality nutrition counseling and care.

Natalie Granucci, RDN

Registered Dietitian Nutritionist

Natalie is a Registered Dietitian Nutritionist with a diverse background in eating disorders, intuitive eating, and management of various medical conditions. Natalie has more than 4 years experience working in mental health facilities throughout Los Angeles. During this time, she

provided nutrition counseling to patients at inpatient, partial hospitalization, and intensive outpatient levels of care. Natalie's passion for behavior change and wellness promotion led her to obtain a Bachelor`s of Science Degree in Nutrition and Dietetics from California State 

University, Los Angeles. Natalie completed her dietetic internship through California State Polytechnic University, Pomona with a focus on medical nutrition therapy. Her 

comprehensive method of practice focuses on a collaborative, individualized, compassionate, and motivational approach to patient care, emphasizing realistic and attainable goals toward building a healthier relationship with food and their bodies. She enjoys educating her patients on evidence-based science pertaining to the influence of food on cognition, mood regulation, neurotransmitters, and the gut microbiome in addition to other related topics. Natalie looks forward to helping clients overcome any struggles and barriers to progress along their journeys toward greater self-discovery. She aims to challenge and guide individuals to make balanced choices consistent with self-care, enhanced quality of life, personal growth, values, and future goals.

Karin Jacinto, RDN

Registered Dietitian Nutritionist

Karin is a Registered Dietetic Technician with a background in eating disorders, food service management, and long-term care nutrition. Her interest in the mental health and nutrition connection led her to working in the mental health field. She has provided nutrition counseling and support for adolescents and adults with eating disorders, helping them build a healthy relationship with food through sustainable practices. Karin completed her master’s degree at the University of Saint Joseph and completed her dietetic internship at Pepperdine University. Through her experiences, she has found a true passion for helping individuals enhance their sense of wellbeing. Utilizing a mindfulness-based approach, she hopes to work with clients collaboratively to support them in practicing self-care through nutrition.


Veronica Buacharern, MS, RDN


Registered Dietitian Nutritionist

Veronica is a Registered Dietitian Nutritionist experienced in working with individuals from different socioeconomic circumstances, co-occurring mental and substance use disorders, and chronic medical conditions. She completed her graduate degree from Cal State LA and her Dietetic Internship through the VA of Greater Los Angeles Healthcare System. She has worked and volunteered with veterans, individuals with eating disorders, and homeless rehabilitation centers, including the VA Medical Center in West LA, Rosewood Centers for Eating Disorders, La Ventana Treatment Programs, and LA Mission. Eating disorders do not discriminate and affect people of all ages, backgrounds, races/ethnicities, and gender identities. Veronica is passionate about serving marginalized communities in the Greater Los Angeles area, especially those who struggle with their food and body relationship. She strives to help clients rediscover their inner body wisdom through embodiment approaches while nourishing their bodies in sustainable ways.


Chelsea Fujitaki, MPH, RDN

Registered Dietitian Nutritionist

Chelsea Fujitaki is a Registered Dietitian Nutritionist (RDN) with a Master of Public Health and a background in community nutrition working with the geriatric population. Chelsea has always had a passion for helping others and found herself drawn to working in the non-profit sector before becoming a dietitian. During this time, she became interested in the healing properties of food as a result of her own health struggles, which inspired her to become a dietitian and help others achieve their optimum health by nourishing their bodies from the inside out. Chelsea believes in an individualized, whole person approach when it comes to achieving overall wellness. She is honored to be a part of the Bamboo Nutrition Therapy team and support a mission that is inclusive to all.

Nicole Nabor, RDN

Registered Dietitian Nutritionist

Nicole is a registered dietitian that has 4 years of eating disorder experience (BED, anorexia nervosa, bulimia, orthorexia, ARFID). Nicole graduated from Cal Poly Pomona with her Bachelor’s in Food and Nutrition with an emphasis in Dietetics, and completed her dietetic internship through CSULB-ISPP with a wide array of hands on experience in nutrition working at a variety of facilities (schools, restaurants, hospitals, recovery centers, etc). Nicole has a passion for helping people recover a healthy relationship with food and bringing joy back to their life, along with providing nutrition education using an “All Foods Fit” philosophy

Amanda Jochimsen

Registered Dietitian Nutritionist-Eligible

Amanda Jochimsen is a native to Pomona, CA. She has completed her Bachelor of Science in Nutrition at Arizona State University. Her dietetic internship was done at West Los Angeles Veteran Affairs Hospital. Amanda’s passion for helping others with their body acceptance journey started with her own journey of self-acceptance. After learning about intuitive eating Amanda knew this is the philosophy she wants to incorporate in her counseling sessions. Amanda’s passion lies with working with underserved populations and feels this is the best way to give back to her community. She  previously was a nutritionist at Women, Infant and Children clinic. Now she is excited to work with the eating disorder and mental health population.

Tamar Apelian, RDN

Registered Dietitian Nutritionist

Tamar Apelian is a Registered Dietitian Nutritionist with a background in various settings, including medical nutrition therapy in acute care, clinical nutrition management, and as a health educator for individuals and groups in outpatient settings. She obtained her BS degree in Dietetics at California State University Los Angeles. She worked in the field of clinical nutrition in the hospital setting, with a diverse group of inpatients and outpatients. In her role as a clinical nutrition manager, she realized that she preferred to work with clients rather than manage from a desk. After recently obtaining her Health Coach Certification through the American Council of Exercise, she realized how important it is to coach clients from where they stand as individuals, while sharing knowledge and information to enrich their lives. Through her own health journey, she has seen that wellness is more important than a number on a scale; the mind-body connection is equally important. When we are happy, we feel good and take better care of ourselves. Self care integrating nutrition, exercise, yoga and healthy relationships help the whole person. Tamar’s core passion is a desire to help others and empower them to make well-informed choices about their lifestyles. When not helping others, she loves to tend to her succulents, make jewelry, dance and practice yoga. She is excited to work with Bamboo Nutrition as she embraces the same philosophies of how the mind, body and food play a role in our wellness.

Alana Todd, MS, RDN

Registered Dietitian Nutritionist

Alana Todd is a Registered Dietitian Nutritionist from Kaneohe, Hawaii. She graduated with a Master's in Nutrition from Case Western Reserve University and a Bachelor's of science in both Psychology and Dietetics from Oregon State University. After completing her dietetic internship through the Louis Stokes Cleveland VA Medical Center, she spent some time as a clinical outpatient dietitian in Honolulu, Hawaii, providing individualized medical nutrition therapy counseling for a diverse population. Alana is passionate about integrating mental health with nutrition and eating habits and strives to educate individuals on the concepts of mindful and intuitive eating. Her specific interests include eating disorders, weight management, diabetes, renal nutrition, sustainable eating, and combating food waste. She is looking forward to applying her skillset, passions, and support at Bamboo Nutrition Therapy. 


Enya Meng, RDN

Registered Dietitian Nutritionist

Enya Meng is an aspiring registered dietitian, who recently completed her dietetic internship at Children’s Hospital Los Angeles. She obtained her Bachelor of Science in Clinical Nutrition at UC Davis and her Master of Public Health at UCLA. As an undergraduate at UC Davis, she founded the Student Association of Body Image and Disordered Eating (Student ABIDE) to help others cultivate a positive relationship between their body and food. Since then, Enya has continuously striven to constructively tackle the disordered eating and weight stigma that is omnipresent in today’s culture. In addition to intuitive eating principles, she is passionate about maternal and child nutrition, as early nutrition makes a huge impact on long term health. Now Enya is excited to be working with the Bamboo Nutrition Therapy team to make a positive impact on her community. 


Melinda Newberry, MS, RDN

Registered Dietitian Nutritionist

Melinda Newberry is a recent graduate of D’Youville College with a BS/MS in Nutrition and Dietetics and a prior BS in Health Science from Cal State Fullerton. Melinda is a Double Gold Medalist with US Figure Skating and currently still trains on the ice in her spare time. Her thesis was presented at the New York State Nutrition and Dietetics Conference 2021 titled Assessing the Sport Nutrition Knowledge And Perceived Self Efficacy And Knowledge of Nutrition Knowledge of Figure Skating Coaches. Growing up in the aesthetic sport culture of figure skating, has led Melinda to seek a career as a dietitian to help others heal their relationships with food in order to become their best selves. She has previous experience working with patients one on one, telehealth, acute care, sports nutrition and food service. She also speaks conversational Japanese and enjoys cuisines from all over the world. Melinda is excited to join the team of dietitians at Bamboo Nutrition Therapy Inc.


Vanessa Sanchez, RDN-E

Registered Dietitian Nutritionist - Eligible

Vanessa Sanchez is an aspiring Registered Dietitian originally from Miami, Florida where she completed her undergraduate degree in Dietetics and Nutrition at Florida International University. Vanessa then came to Los Angeles where she recently completed her dietetic internship and Master's of Science degree in Human Nutrition at California State University, Northridge. As a student, she became passionate about sports nutrition and combating weight stigma and knew she wanted to incorporate the intuitive eating philosophy in her practice as a Registered Dietitian. Vanessa is passionate about helping others heal their relationship with food and feeling confident in their skin. Being a first generation Venezuelan American, Vanessa is passionate about advocating for and working with the hispanic community and other underrepresented communities by bringing nutrition counseling in both English and Spanish. Vanessa is excited to make a positive impact on her community as a dietitian at Bamboo Nutrition Therapy.
